Eisbein mit Sauerkraut

Another mouth-watering delicacy to share.

Eisbein Preparation:


  • Pour the water in a pot.
  • Add the  peeled onion, bayleaf, carnation and salt.
  •  This is how it looks like.

  •   Then start cooking it .
  • When it is boiling put the pork knuckle inside and cover it.
  •  This is slow cooking. Cooking time is ca. 90-120 minutes. 
  • When it is ready set aside the pork knuckle. 

And now the Sauerkraut...( I used canned.)
  • Peel the onions and chop it into small pieces.
  • Cut the bacons into stips and chop it into small squares.
  • Now heat the porklard in a pan.
  • Saute the  chopped bacon. When the bacon is shiny add the onions. Cook unti it become tender.
  • And then add the sauerkraut.
  • Pour the pork stock inside. Add the juniper berries, bayleaf, sugar, salt and pepper to taste.
  • Lastly put some freshly grated potato and mix it until it become stiff. Cooking time is ca. 30 mins.
  • You can serve it whole.

or without bone like this


  
Tip: Best serve with mashed potato.
